Beer and Brewing As are all the finest beers, Little Apple beer is hand-crafted using only four ingredients: malted barley, hops, water and yeast. Malted Barley Barley used in brewing is grown all over the world, but mainly in the Midwestern United States and Europe. This barley is steeped in warm water until the grain begins to germinate or sprout. This begins the conversion of starches to sugars. After germination, the grain is dried; this is malt. Hops Imagine hops as the spice in beer that arouses your sense of smell and taste. Hops provide the unique bitter taste that lingers on your palate as a pleasurable memory. Without hops, the sweet and malty taste would be overwhelming. Hops are a climbing vine in the Cannabis family which grow like wild grapes. There are many varieties of European and American brewing hops. Because hops are used for taste and aroma in beer, our brewer uses two different types of hops in each beer: bittering hops for the bitter taste; aromatic hops for the bouquet. Water As we have all learned over the years, due to the flood of beer advertisements, water is very important in brewing beer. Our Brewer adds various salts tot he excellent local water to enhance the flavor of the beers. Yeast If there is one ingredient that could be considered the "brewer's object d'art," it is the yeast which converts the natural sugars from malted barley to alcohol during fermentation.
